Apple Pecan Feta Salad

Ingredients
2 oz lettuce of your choice
1 medium apple, cored and thinly sliced
2.5 Tbsp pecans, chopped
½ cup feta cheese, crumbled
2 Tbsp dried cranberries
¼ small red onion, thinly sliced
1 Tbsp olive oil
1/2 Tbsp apple cider vinegar
¾ tsp pure maple syrup
Pepper and salt to taste
Directions
1- In a colander, run red onion under warm water for about 10 seconds while continuously tossing to remove harsh bite. Drain well.
2- In a large bowl, toss lettuce, apple, pecan, feta, cranberries and onions.
3- In a small bowl whisk the olive oil, apple cider vinegar, pure maple syrup, dijon mustard, salt and pepper.
4- Drizzle dressing over salad and mix everything to evenly coat. Serve immediately after dressing.
